With Valentine’s Day coming up what would chef suggest for a romantic meal for two?

You can’t beat a lovely romantic night in for two, with some good food and some good wine. How about a few little Cumbrian tapas to start – some locally air dried ham wrapped around some charentais melon, smoked salmon with a little horseradish crème fraiche, local blue cheese with onion chutney, brown shrimps with mace butter, some wonderful breads from my mate Simon Thomas at Staff of Life Bakery and from further afield, some marinated olives. For main course I would go for a lovely piece of grilled sea bass serve with creamed potatoes flavoured with lots of freshly chopped parsley, some slow baked plum tomatoes, steamed green vegetables and a little dressing made from reduced red wine, a little red wine vinegar and some good olive oil. For dessert, I would suggest a little chocolate fondue, place 200g dark chocolate, 40g unsalted butter, 140ml double cream and 100ml milk in a small saucepan and heat gently until the chocolate has dissolved and the sauce is smooth, buy some marshmallows, strawberries, some little shortbreads and have lots of fun dipping them and sharing.
